delicious Dairy Free Italian!
With the holidays right around the corner, many of us are getting ready to get together with family and friends. For some, the holiday time can be an added stress when they have dietary restrictions. I’ve written about dietary restrictions in another blog, and today I’m writing about those who eat dairy free. Some may eat dairy free due to a dairy allergy, being lactose intolerant, vegan or they may just feel better without it. There are many recipes that you can find that omit dairy. Recently my wife used cashews as a replacement for cream cheese and made a dairy free cheesecake. The trick to replacing cashews with cream cheese is to soften them for about 4 hours and then add them to your food processor with whatever flavour you want, such as strawberries and freeze it. Other dairy free alternatives to a dairy-free dessert such as cheesecake can by whipping thick coconut milk or using Tofutti
which is a brand of dairy free cream cheese. It may be a different way to enjoy dairy free treats but try it out, I think you’ll like it.
