Salmon San Fransesco..Contemporary Italian Fare.

Part of our love of Italian cuisine, stems from it's ability to meld the Italian flavours and cooking techniques with those of other cultures. One of my favourite contemporary dishes from our menu is Salmon San Franseco. I suggest this dish to all of my guests who ask my opinion and they are never disappointed! It combines fresh ingredients like salmon, fresh citrus, curry and crsipy tomatoes perfectly! If you are a salmon lover, then you won't be disappointed!


8 oz. salmon fillet

1 tsp curry powder

1 oz white onion

1 oz diced roma tomatoes

1 oz fresh lemon juice

1 oz fresh lime juice

2 oz 35% cream

1 tsp blended basil

salt and pepper to taste

Lightly brush the salmon fillet with oil and place in the oven and cook to desired temperature. I suggest medium.

Oil a pan and saute the onions with salt and pepper. Deglaze the pan with the lemon and lime juice, add the curry powder and make a paste. add the cream and reduce the sauce. Finish it with the fresh roma tomatoes and basil paste. Serve with your favourite pasta or risotto like we do. With this simple contemporary Italian dish, your dinner party will be a huge success!
