"Winter Is Coming"...and by that I mean carbonara season!!
It's an ongoing joke with the staff here at Buccacinos that we know that winter is here not because the first day of winter is December 21st, but because of the increase in sales of our linguini carbonara! Our version is linguini tossed in a delicious garlic and pepper cream sauce. What could be better? Crack an egg yolk on top if you want an even more decadent dish! It's a simple dish that even the most rookie cook could make.Trust me...I know from experience!!
Ingredients
10 oz. cooked linguini pasta
1 tbsp. bacon or pancetta fat
1 tbsp. butter
2 oz. cooked sliced bacon or pancetta
4 fl. oz. heavy cream
.5 tbsp minced garlic
salt and pepper to taste
Recipe:
Put bacon fat, bacon and minced garlic in a pan and cook for 1 minute. Bring to a boil and then reduce the sauce on lower heat. finish with butter and season to your liking. The sauce should be light and creamy. Toss with linguini. Top with an egg yolk.
